To fit a seat back there would require cutting out major portions of the structural support that would be in the way (not only the transmission tunnel, but the structure between the wheel wells too). There'd be significant chassis flex as a result. Even if you think you have a way around that (roll bar? adding gussets or other reinforcements?), I think you would still be facing issues with clearing the driveshaft, rear subframe, and diff, and still have enough headroom to put somebody back there, not to mention getting the seat to fit around the added structure reinforcements After that, you would need to find anchor points strong enough for the seat as well as the safety restraints (3000 lb minimum pull force to meet FMVSS requirements). Since the 2+0 was never intended to have a rear seat, you'll have a hard time finding those anchor points. Also consider what would happen in a rear impact - the "rear seat" passenger would rock back and upwards. With nowhere to go but into the roof or rear hatch glass that would be a very nasty (if not fatal) injury. (In case you want to question my facts on this, I used to be an engineer at a seat belt company). I'd suggest jacking up the car and taking a look underneath to understand the full gravity of what you're wanting to do. Or strip out the interior panels in the rear cargo area.
